Sítio Cachoeirão is a family-run farm in Alto Caparaó, Itaguaçu, Espírito Santo, managed by agronomist Eduardo Zanotti Guerra. At 850–1,100 meters altitude, the farm produces 800 bags of coffee annually, half of which are semi-washed. Varieties include Catuaí 81, 2SL, 785, and 44/99.
Processing methods include fully washed and semi-washed (Cereja Descascada), with mechanical drying over four days. Eduardo prioritizes rapid post-harvest washing—within 4–5 hours—to enhance flavour.
The farm emphasizes sustainable practices, using organic fertilization guided by soil analysis, rainwater capture systems, and dedicated conservation areas.
