In 2019, Testi Specialty Coffee acquired the AASH PLC washing station and collaborated with nearby farmers to produce exceptional specialty coffees. Approximately 750 local smallholders supply the station with coffee beans from their high-altitude farms, situated at or above 1,900 meters above sea level. These farms boast a blend of JARC varieties and indigenous landraces uniquely adapted to the region's specific conditions. Cultivated in Harrar, this coffee captures the cherished fruity and wine-like characteristics typical of Harrar coffees, undergoing superior processing to deliver a delectable and high-quality brew that stands apart from the rest.

For countless generations, the inhabitants of this region have dedicated themselves to cultivating coffee, showcasing an authentic expertise passed down through the ages. Agricultural practices in Harrar continue to embrace a predominantly traditional approach. Farmers in Harrar are known for intercropping their coffee plants with various food crops, a method widely adopted by smallholders for its efficient land utilization and the provision of sustenance for their families.

Beyond the traditional intercropping, the majority of farms also adhere to an organic-by-default ethos. Harrar's farmers typically eschew the use of fertilizers or pesticides, relying on minimal interventions. Manual labor predominates in farm activities, with mechanisation playing a minor role, even in the processing stages.
